Red Gold Tomatoes were nice enough to send Jennie and I some tomatoes to taste and we LOVE them!! They have an amazing range of tomatoes that are all natural and taste great! They harvest their tomatoes in the heart of tomato country – Indiana! They tell us there are few places on Earth like Tomato Country where you will find the ideal combination of soil, climate, rainfall, angle of sun and even the freeze/thaw cycle that are perfect for growing delicious tomatoes!
Jennie and I wanted to share with you a few of the recipes we tried from their cookbook, “Heartwarming Recipes for the Busy Cook”. We have both been so impressed by this cookbook and highly recommend it! They have a lot of easy, quick recipes the whole family will love.
I chose to try and make a healthier version of queso dip with freshly grated cheddar cheese instead of processed cheese. I used the Red Gold Tomatoes with Green Chilies to make a quick and easy version of this dip for a great snack with half the calories of the Velveeta version! All you need is:
- 4 cups grated extra-sharp cheddar cheese (about 12 ounces)
- 1 tablespoon cornstarch
- 1/4 cup whole milk
- 1 cup minced white onion (about 1 small onion)
- 1 can Red Gold Tomatoes with Green Chilies
- garlic to taste (I used 2 cloves)
- 1 tsp of chili powder
