Eggs are a great way to start the morning….from what I’ve read and heard from the “nutrition experts” protein is one of the best ways to start your day! If you’re trying to watch your waistline it’s especially a great way to start your day with eggs! Jennie and I both noticed a huge increase in weight loss many months ago when we switched our diets up a little and started every day with eggs.
There are so many ways to have eggs: scrambled, sunny side up, omelet, hard boiled and my favorite….poached! I used to have poached eggs all the time because when we were living in England my mother-in-law would make them for us when we went over for our weekly brunch. It’s basically steamed eggs and they are super healthy and delicious!
You can poach eggs in a pot of boiling water (and a little vinegar) but it does take a little practice if you’ve never done it before. For a while now I’ve wanted to get an “egg poacher” which is a clever little device that allows you to poach four eggs at a time! It works a lot like a vegetable steamer, bringing water to boil in the bottom of the pan with little egg cups at the top and lid that keeps the steam from the boiling water in the pan to cook/steam your eggs! It usually takes about 4-6 minutes to cook them, depending on how well done you prefer your eggs and we got our egg poacher for $19.99 from Target. There are lots of more economical ways to poach eggs, including these adorable little egg cups for poaching that float in the boiling water so you can use any pot and lid you already have!
