Wondering what to do with all your yummy fresh zucchini out of your garden? Check out this recipe for delicious zucchini chips that were so good Luke and I ate the first batch so quick, we had to make more for Daddy to taste! Emma went crazy for them and was practically taking bites out of my fingers while I gave her these. I didn’t use a dipping sauce but they would be tasty with your favorite ranch or honey mustard sauce!
Recipe for Zucchini Chips:
Prep Time: 15 Minutes Bake: 20 Minutes
1/2 cup breadcrumbs (I used plain panko breadcrumbs)
1/2 cup grated parmesan cheese
1-2 tablespoons of Wildtree California Garlic Pepper
1/4 cup of milk
2 medium zucchinis, thinly sliced
Preheat oven to 450 degrees F and grease two baking sheets with cooking spray. Combine breadcrumbs, parmesan cheese and the California Garlic Pepper. Pour milk into a shallow bowl and dip the zucchini slices into the milk and then into the breadcrumb mixture. Place them onto your cooking sheet in a single layer and spray the tops of the slices with cooking spray.
Bake for 10 minutes on one side until crisp and brown and then turn over and bake for another 10 minutes. ENJOY!
