Are you looking for some quick and easy meals that are refreshingly new and different from your usual dinner routine? Kroger is starting a fun new “Taste Of Mexico” fiesta starting this week, going through June. I was able to get a sneak peak at some of the new Mexican flavors and get some fun dinner time inspiration that has my whole family asking “are we in Mexico?!”
With such beautiful weather lately I want to be outside more playing with the family and not stuck in the kitchen cooking dinner. I have been looking for easy and quick dinner meals and love this recipe because I can start it in the crock pot in the morning and quickly put the rest of it together right before we sit down to eat.
Kroger has a great selection of authentic Mexican flavors to help turn any dinner table into your own fiesta! We like Mexican flavors but I usually don’t cook a lot of Mexican recipes at home so trying some new easy Mexican dishes has been deliciously refreshing to spice up our usual flavors. Kroger has so many great recipes on their “Taste Of Mexico” homepage, along with a different prizes each day (gift cards, diamond ring, trip to Mexico!) just for joining and participating in sharing with your friends, watching videos and taking surveys.
Making the pork carnitas was super easy, I put a pork roast in the crockpot and put one can of beer in the bottom of the crock pot along with large chopped onions and 1 cup of organic chicken stock (you can also use 1 cup of orange juice instead of stock).
- 2 Bay Leaves
- 1 tbsp Garlic powder
- 2 tsp Onion powder
- 1 tsp Oregano, dried
- 1 tbsp Chili powder
- 1 tbsp Cumin
- 1 tsp salt
- 1 tsp pepper
- Place bay leaves in bottom of crock pot.
- Combine all other ingredients together and rub all over Pork Roast.
- Place in crock pot and cook on low for 4-6 hours.
- 1 Mango
- 1 Avocado
- 1 Plum Tomato
- 1 Jalapeno
- 1-2 Cloves of Garlic
- 1/4 cup of fresh Cilantro
- 1 Lime (juiced)
- 1/4 cup red onion
- 1 tbsp Olive Oil
- Salt and Pepper to Taste
- Combine ingredients and spread on top of Pork Carnitas. Drizzle with Crema Mexicana, Enjoy!
